My oldest daughter is the queen of meal planning. Me, not so much. But, with the cost of groceries skyrocketing, I have been reminded that it is an important muscle to flex.
So, on Sundays I’ve been spending a bit of my bandwidth thinking about our lunch and dinner menus, so I can be a little better prepared, save a little money and still eat well.
I came across this delicious Mediterranean-style tuna salad recipe that elevates the simple dish. It is quite tasty on a salad or a slice of Sarmentine’s fabulous walnut bread. Give it a try and let me know what you think.
Tuna Salad
- Two 5-oz cans tuna
- 1 small shallot, finely minced
- 1 stalk celery, finely minced (I used 4)
- ¼ cup peperoncini, chopped
- A handful of Castelvetrano olives, chopped
- 1 tbsp capers
- Plenty of dill & flat-leaf parsley, chopped
- ¼ cup mayonnaise
- 1 tbsp coarse-grain mustard
- 2 tsp peperoncini brine (or vinegar)
- Salt, to taste
Best made a few hours ahead — a little time in the refrigerator lets the flavors settle and bloom.
Behind the Scenes: Design in Progress
We recently completed a professional photo shoot for one of our West County/Sebastopol projects.
After years in the making, reaching the finish line is always bittersweet. We spend months, sometimes years, on the planning and create deep relationships with our clients.
We travel the highs and lows of design and the construction process and make it to the other side of transformation.
There is something magical when the day comes to photograph and document our work.
Seeing our vision through the lens of the camera is truly amazing.
It will be a few weeks until we get to see the finished photos. But here is a sneak peek video from that day.
Design News
We are just breaking ground on one of our Kenwood projects, a vintage 1910 house that our clients purchased during Covid.
Interestingly, the original 2 bedroom structure was lifted and became the second floor. Our clients wanted to add square footage, improve the functionality of the floor plan and build on the farmhouse feel and charm.
The setting is charming, surrounded by old stone walls.
We started in Fall of 2024 with the second floor and a light assist with the landscaping and are beginning phase II with the addition portion and renovation of the main level. More to come soon…
